I often use simple phrases like "thank you" to end each QSO in the appropriate language. For the guys sitting there listening to you, I think this may encourage others to call who may not be totally comfortable with English, and besides it is also fun! Here's a primer with phonetics (in parentheses):
German: Danke (donk uh)
Russian: Spasibo (spa si' bah)
French: Merci (mer cee')
Italian: Ciao (chow) or Grazie (grot' see)
Spanish: Gracias (gra see' us)
Japanese: Domo (doe mo)
Swedish: hej hej (hay hay)
Finnish: hei hei (hay hay)
There are longer versions but these will get you started!

I usually use English except while working W/N/K stations when I usually slip effortlessly into fluent American.
