A few years back I switched over from soldered to crimped PL-259 connectors
whenever I need to replace or make up a new cable. The connectors I buy are for
crimping both the shield and center conductor. Why would I want to also solder
the center conductor after crimping? What does that buy me? Doesn't that defeat
the reason for buying crimp connectors - ease of installation?

According to the specification the center pin is soldered, so DO NOT Attempt to
crimp the center pin.
Purchase some proper coax prep tools it will make the easier and more
consistant.
DX Engineering sells the prep tools, crimpers, and connectors. Be sure to use
Amphenol connectors with the correct part number for the cable your using.
