I don’t know which is the best “out there” but the best iambic paddles “that 
I’ve used” are the Begali “Contour” model.

I’ve owned Heathkit (crude), Bencher (they worked), Vibroplex (shiny and they 
worked), Kent (worked better), and now I use a Begali set.

Both the spacing and the (magnetic) return force adjustments use extremely fine 
pitch screws for accuracy, giving almost microscopic granularity to changes.  
Paddle movements are crisp and solid feeling, and the base weight is 
significant so the paddles never “walk” on the desk.
